This bespoke, one-off itinerary offers an exciting blend of Spain and Morocco - the perfect culinary pairing! Geographically Mediterranean but with a second rugged Atlantic coastline, Spain enjoys a wealth of seafood and a climate perfectly suited to olives, citrus fruits and all manner of herbs and spices. Today, the quality of ‘Jamón Ibérico’ - Iberian Ham - is heralded worldwide however, pork has not always featured on Spanish menus because Islamic reign over the Iberian Peninsula persisted for almost eight centuries. The influence of Moorish culture can be seen intertwined with Catholic traditions everywhere and no more so than in its cuisine. For this reason a culinary journey through Spain ties together beautifully with time spent in the spice souks and rose scented gardens of Morocco. Only when the cultures and cuisines of the two nations are combined does the full story become apparent.

Beginning in Spain you’ll travel through Madrid, Seville, Granada and Ronda, taking in colourful markets, ocean fresh seafood, olive and almond groves, sultry bodegas and lively tapas bars. You’ll visit the Alhambra and the Alcazar, sample the finest acorn-fed Iberian ham and drink sherry straight from the barrel. Moving to Morocco you’ll land in the capital Rabat, taste the produce of a sophisticated French-inspired winery then head to Fes, known for its tanneries and ancient Jewish quarter. You’ll witness the women baking in communal bread ovens, taste the best tagines and b'stillas on the planet and wander the medina sampling sweet pastries dripping with honey. Spend a night glamping in the desert, then end in Marrakech and enjoy the finest flavours of Morocco in a pioneering restaurant run by an all-female team. Along the way your host Christine Manfield will enhance your experience using her extensive knowledge as a top-level chef to interpret the flavours, smells and sights you encounter.

This enriching itinerary will take you on a journey to the ‘culinary cradle’ of Europe, through Islamic and Catholic history to arrive at the gastronomic delight of modern day Spain and Morocco.

Itinerary Details

Day 1 | Madrid | 2 nights

Welcome to Spain! On arrival check in, freshen up and head for dinner ar the trendy KultO restaurant.

Day 2 | Madrid                        

Explore the Cheuca neighbourhood's buzzing vibes, fashion and design shops then sightsee Madrid emblematic monuments and browse the San Miguel market. Lunch at Cuatro de Ocho, free time in the afternoon, then a classic tasting menu and wine pairing at Restaurante Cebo.

Day 3 | Seville | 2 nights

Take the fast train to Seville through olive groves and almond orchards then a walking tour of Seville including Santa Cruz suburb, the old Jewish quarter and the Alcazar. Tapas and a flamenco performance in the evening.

Day 4 | Seville

A day trip to Jerez to wander the town centre and market, visit a bodega and sample the best VOS and VORS sherries. A dinner of fabulous local dishes at Ispal.   

Day 5 | Granada | 1 night

Drive to Granada and visit the magnificent Alhambra Palace. Explore the UNESCO World Heritage listed Moorish quarter then dinner in the Albaicin with views of the Alhambra and Sierra Nevada.        

Day 6 | Ronda | 2 nights        

Drive through the beautiful whitewashed villages of Andalucia stopping at an olive mill. Free time to explore Ronda, lunch at a winery then check into a boutique rural hotel.

Day 7 | Ronda

A day at the farm gathering ingredients, cooking and tasting biodynamic wines, then a home-grown feast for dinner.

Day 8 | Rabat | 1 night                                       

Fly to Casablanca, visit the beautifully tiled Hassan II mosque then drive to Rabat for an overnight stay.

Day 9 | Fes | 2 nights      

Drive to Fes via the wingrowing region of Meknes and the Roman ruins of Voloubilis. Afternoon walking tour of Fes sampling sweet pastries and wine along the way.

Day 10 | Fes  

Tour of Fes including the old Jewish quarter and famous tanneries. Afternoon at leisure then dinner at Nur.                  

Day 11 | Agafay | 1 night   

A quick flight to Fes then a short drive into the desert for a glamorous overnight glamping experience.

Day 12 | Marrakech | 2 nights    

Return to Marrakech to explore the souks, spice markets, media and Djeema en Fna Square. Dinner at Latitude 31. 

Day 13 | Marrakech                                 

Time to explore and shop followed by a cooking experience at La Maison Arabe and a visit to Yves Sanit Laurent's Majorelle Gardens. A farewell dinner at Al Fassia.

Day 14 | Day of departure                            

A leisurely morning with time for a spa treatment before heading to the airport to begin your journey home. End of arrangements.
