This short journey is designed to complement the ‘A Southern Sojourn’ safari through Sicily and Puglia, and the two itineraries have been tailormade to tie together seamlessly. It will provide the opportunity to delve deeper into this bucolic region, sampling the spoils of its temperate climate, productive oceans and centuries-old gastronomic traditions.
The Puglia region is saturated in history. Great cathedrals were built for the Crusaders en route to the Holy Land, Norman castles still stand proudly and fortified farms or ‘masserie’ reflect the region’s farming heritage. Exploring the southern Salento region of Puglia you’ll discover quaint villages, olive groves, huddles of conical trulli houses and ornate Baroque architecture. Your base for the duration will be Ugento, a sleepy town in ‘the heel’ of Italy known for its magnificent castello, cathedral, Franciscan monastery and Byzantine and Baroque churches hidden down tiny alleyways. It is just 4km from the popular Adriatic coast, yet is unspoilt and undiscovered—the Italy of fifty years ago.
You will visit the old fishing port of Gallipoli, take part in hands-on cooking experiences with state of the art facilities, learn from the country’s best sommeliers and take to the seas with a band of local fisherman to visit dramatic sea caves and haul in the daily catch. You’ll stay at Castello di Ugento, a unique and historic boutique hotel housed within the ancient walls of a 17th century castle. Here, an 18th-century walled kitchen garden complete with 200 year old fruit trees provides an oasis of calm and plenty of orchard fruits, herbs and vegetables for an exquisite dining experience. Renowned Australian chef Christine Manfield will be your host throughout and you will benefit from her expert knowledge and professional insight as you discover the tastes of a delightful pocket of Puglia in her company.

The 'A Southern Soujourn' itinerary will draw to a close. Wave goodbye to the group and transfer by road (1 hour) to Ugento. Check into a beautiful boutique hotel set within the thick
walls of a restored castle hotel and enjoy welcome aperitivos in the garden and dinner at the castle.
Visit the local market with the hotel's resident chef followed by a cooking class in the state-of-the-art kitchen. In the afternoon visit a winery,
enjoy drinks at Farmacia Balboa and heady to nearby Tricase for dinner.
Travel 20mins south to the pretty town of Torre Vado to head out on boat trip with the local fishermen. Enjoy a relaxing afternoon at a beach club followed by a farewell dinner and an exclusive sommelier experience.
